Gond katira is tragacanth: a gum that seeps from the astragalus shrub, hardens in the sun into pale crystalline flakes, and then does something remarkable when you soak it. Overnight in cold water, a teaspoon of these hard crystals swells into a large bowl of clear, flavourless jelly.

That jelly is one of North India's classic responses to summer. It is stirred into cold milk, sherbet, falooda and lemonade to cool the body from the inside — a sheeta (cooling) preparation in the strict Ayurvedic sense, taken through the hot months and specifically avoided in winter. It is also a traditional postnatal food, and a mucilage used for a dry throat and a hot, irritable gut.

Hand-graded pale crystals, food grade. Do not confuse it with gond (edible acacia gum), which is warming and used for the opposite purpose.

A staple in our house now

A very small amount is enough, so this will last me a long time. The jar seals properly, which is essential for this. Pleased I found this shop.

Clear instructions on the pack, which I appreciated. I use it two or three times a week and have barely made a dent in the pack. It would be good to have a larger size available.

  • How do I know I'm getting the genuine article?

    Nikhil S. · 4 weeks ago

    • Every lot is identity-checked against a reference sample before packing, and we keep the batch records. If anything about a pack looks off to you, send us a photo and we'll look into that lot.

  • How much should I use at a time?

    Rachel M. · 2 months ago

    • Start at the low end of the range on the Dosage tab above and give it time. More isn't better with this one.

      HerbasenseOfficial answer· 2 months ago

  • Is the packaging recyclable?

    Rachel M. · 2 months ago

    • The outer carton is card and goes in with your paper recycling. The inner pouch is kept airtight to protect the contents, so check your local authority's guidance for that part.

  • How should I store it once it's open?

    Nikhil S. · 3 months ago

    • Somewhere cool, dark and dry, sealed between uses — a cupboard away from the hob is ideal. Storage guidance for this product specifically is on the Storage tab above.
